Hey Loves! Today I’m sharing with you a recipe for the easiest and most delicious pork recipe I’ve ever made in my life. Seriously, my husband who never eats leftovers ate ALL THE LEFTOVERS for this dish. And it’s totally family sized, if you’re looking for a dish to feed a large group. I’m pretty sure this will be what I make for the family on Easter this year too, because it’s so simple to make, serve, and seriously so yummy!

Here are all the ingredients you need to make this one-pan pork tenderloin:

  • 2 lbs pork tenderloin
  • 1 jar hoisin sauce
  • 1 pound green beans (I bought the precut bag at the grocery store to save time)
  • 1 bag baby carrots
  • 1 bag baby potatoes
  • Olive oil
  • Salt + Pepper
  • Fresh chives
  • 4 tbsp butter (I use an olive oil spread as a butter substitute since Landon has an allergy)
  • 1 tbsp chopped garlic
  • Cooking spray (I use olive oil Pam)
  • 1 large baking pan (I only have a large cookie sheet and while nothing leaked, you will not have to worry about drips etc. if you have a baking pan with sides. I know what I’m adding to my Mother’s Day wish list…haha)
  • Meat thermometer

Here are the directions for making this one-pan pork tenderloin:

  1. Preheat oven to 450 degrees Fahrenheit.
  2. Spray baking sheet with cooking spray.
  3. Coat green beans in 1 TBSP olive oil and season with salt and pepper. Add to center of baking sheet. This will be your nest for the pork.
  4. Slice potatoes in half. Coat in 1 TBSP olive oil and season with salt and pepper. Add to baking sheet flat side down.
  5. Coat carrots in 1 TBSP olive oil and season with salt and pepper. Add to baking sheet around potatoes.
  6. Separate your pork tenderloin and lay spaced apart on top of the green beans nest. Coat pork tenderloins in the Hoisin sauce. If you’ve never had Hoisin sauce, it’s a sweet, tangy, salty soy Asian barbecue sauce. It’s perfect with the pork!! One YouTube viewer also suggested you could inject some garlic into the pork for an extra garlicky flavor, which I think I would love!
  7. Put pan in oven and bake for 30 minutes. Use meat thermometer to check at 30 minutes. Ideally, pork is at 145 degrees Fahrenheit. Cook until pork reaches this temperature or ever so slightly higher.
  8. While pan is baking, mix 4 TBSP butter, 1 TBSP garlic, and 2 TBSP roughly chopped chives together. Once pork is removed from oven, coat the tenderloins in the butter mixture, and spoon extra butter over the veggies. Let melt and let pork sit for 5-10 minutes before slicing.
  9. When pork is sliced, it should be a light blush pink color to white- this is the recommended meat color for the most tender pork.
  10. Once sliced, immediately serve the veggies and pork, and ENJOY!!!
