For a while there, it felt like I was always on the move. I'm happiest when I'm traveling, but coming home means that I really get to slow down and take my time in the kitchen. I've been all about creating warm, feel-good meals.
One of my favorite things that I've tried lately is this viral TikTok tomato soup. It's the perfect pick-me-up on these days where it feels like winter just won't end! I'm so ready for Spring weather and sunshine to come back to Ohio. But if I can't have sunshine, a warm bowl of soup will have to do!
My boyfriend begs me to make him this soup and sandwich combo! Youβre gonna love it! πππ
On a sheet pan add:

8 large tomatoes, cut into quarters
π« one red bell pepper, cut into chunks

one onion, cut into chunks
π₯¬ fresh basil leaves
π§4 tbsp minced garlic
π§ cover in olive oil, salt and pepper
π₯ bake at 425 for 25 minutes, broil a few minutes at the end to make veggies extra toasty

pour all roasted ingredients into a soup pot. Add 2 cups vegetable broth and 1 cup heavy cream.
π€€ blend with a hand blender until all ingredients are smooth. Simmer on medium low heat until youβre ready to serve

These are so versatile and timeless, but the most perfect if you're trying to feed a crowd. Whether you're hosting people for March Madness, feeding a load of hungry kids, or looking for something to do with leftover roast turkey (PS: bookmark this for after Easter!) this recipe is just as fast as it is delicious!
Slice Hawaiian rolls in half and place the bottoms in a greased 13x9 inch baking dish
add a layer of Dijon mustard
add a layer of ham
layer on swiss cheese
bake on 350 F for 10 minutes until cheese is melted
add a layer of Mayo
put the tops of the Hawaiian rolls on
melt a 4 tbsp butter and mix in a teaspoon salt and a teaspoon onion powder. Drizzle over the top of the buns and sprinkle on poppy seeds.
bake for 5 more minutes, until tops of buns are toasted. Serve hot and gooey and enjoy!!!

1 parsnip sliced
1 1/2 cups sliced carrots (I used a bag of crinkle cut carrots from the grocery store to make prep easier!)
1 red onion chopped
3 celery stalks chopped
1 lbs beef stew meat cut into cubes
2 cups beef stock
1 bottle Irish beer
1 tbsp cornstarch
season with salt, pepper, and sprigs of fresh thyme
cook in crockpot on 4 hour setting. Serve with mashed potatoes, baked bread, or biscuits! Enjoy!!
