Hey Loves! For this week’s healthy meal plan post, I found a bunch of healthy and low-carb recipes that fit into both the Mediterranean diet and Keto-style cooking. I also found some gluten-free recipes for you as well! I hope that these meal ideas help you and you meal plan for the week ahead!

SUNDAY

I love making white chili to change up regular chili, and it’s the perfect meal for a Sunday when Football playoffs are on, that you can just throw into a Crockpot or put on low on the stove and forget it. Here is a white chili recipe I found on Pinterest that is very simple to make. I love serving ours with sour cream, shredded pepper jack cheese, and Tostitos scoops to dunk!

MONDAY

Adam’s favorite food is chicken parmesan, and he’s been trying to eat super healthy and low-carb, so I found a baked version of it that you could serve with salad or veggies instead of pasta, but still enjoy the chicken parmesan main dish.

TUESDAY

I first heard about hobo packets from my good friend Amy Darley, and I found this Cheeseburger hobo packet recipe on Pinterest that looked amazing. They are so easy to make in the oven or you can make them on the grill, so whatever the climate you live in, you can have a delicious, low-carb cheeseburger dinner!

WEDNESDAY

Takeout day. Sometimes you just need a good break in the middle of the week, right?

THURSDAY

Being from the Midwest, we love everything cheddar bacon and ranch, and this Chicken bacon ranch casserole sounded amazing. It’s also gluten-free.

FRIDAY

I feel like when Friday rolls around, I am always craving Chinese food. So to avoid ordering takeout, I found this Cauliflower Chicken Fried Rice recipe. I love that this uses a variety of veggies too! And it’s a great way to satisfy a craving that is low-carb and gluten-free too!

SATURDAY

Since our weekends, especially Saturdays, are so busy, I planned this to be a leftover or takeout day, depending what we have leftover.
