COOK WITH ME + SUMMER MEAL PREP

I did an ultimate cook with me and summer meal prep with me! I’m cooking all my family’s favorite meals in today’s video for you homemade lasagna, amazing shish kabobs, easy sausage Alfredo pasta, cheesy gordita crunches, cilantro lime corn we love this with burgers in the famous bacon cheddar taco dip! I’ve got three super easy and delicious meals that are picky eater approved I have two young kiddos in my husbands also picky eater too and all these hold it great in the fridge or freezer as well!

If you have a busy week ahead I hope this meal planning and these meal ideas help you! Let’s get to cooking!

Lasagna

Sauce:

  • Add olive oil to pan
  • Add 2 tablespoons chopped garlic
  • Add onions
  • Add in beef until brown
  • Two cans diced tomatoes
  • 1 can of tomato paste
  • I added basil, oregano, and parsley and added to sauce

Prepare Lasagna

  • Spray pan with cooking spray and do a layer of sauce
  • Then top with lasagna noodles, a layer of ricotta cheese
  • Top with sauce, and sprinkle mozzarella cheese.
  • Add another layer of noodles and repeat layers!
  • I cover with tin foil and a hack I learned from a viewer is spray with cooking spray and the cheese won’t stick to it!
  • Bake at 350 for an hour, remove foil and bake for another 10 minutes
  • This is a great recipe to freeze and its great left over!

Cheesy Gordita Crunch

  • Follow taco seasoning directions by adding beef, water and seasoning
  • Once done, I add to Tupperware and add to fridge
  • You will need soft shell tortillas and hard shells, I like the nacho cheese ones.
  • Sprinkle cheese on the tortilla and microwave until cheese is melted.
  • Add taco shell and fold to stick to the top shell
  • Add any toppings you’d like! I did meat, lettuce and black olives. I also added a chipotle ranch sauce that makes it so tasty and just like taco bells!

Sausage Alfredo Pasta

  • Brown sausage in pan
  • Add in 2 jars of alfredo sauce
  • Add sliced roasted red pepper
  • Once pasta is cooked, pour sauce over top!

Shishkabobs

  • Cube the beef and cover in any marinade of your choice! I let it set all afternoon.
  • Cut peppers, onions, mushrooms, any veggies of your choice, and add to skewers!
  • I’ll brush any of the leftover marinade on just for a little extra flavor too!
  • Grill until done to your liking!
  • We usually pair this with a rice pilaf, I think it’s a nice side dish!

Burgers

  • For our burger night we grilled out and had corn, leftover rice pilaf, and fresh watermelon!
  • Cilantro lime corn:
  • Butter, fresh cilantro and garlic and mix it all up and spread over corn

Bacon cheddar taco dip

  • First layer:
  • Half a container of sour cream
  • A block of cream cheese
  • Salsa
  • Diced tomato
  • Green Onions
  • Taco/Mexican cheese
  • Cook a pound of bacon, crumble to top!
  • Slice veggies
  • I also slice the bacon before cooking so it crumbles so much easier
  • 8 oz cream cheese and 8 oz sour cream and blend until creamy
  • I use a 13×9 pan and spread the first layer of cream cheese and sour cream
  • Then I layer the jar of salsa on top and spread until even
  • Top with tomatoes and green onions
  • Top with a nice thick layer of cheese!
  • Cover with crumbled bacon
  • Serve with tortilla chips
